METHOD:
For the Lauki kofte, combine all the ingredients in a bowl and divide the mixture into two equal portions and shape them into small round koftas. Steam it in a steamer for about 20 minutes till the koftas are done. Keep it aside.
Then blend the onions, ginger, and garlic to a smooth paste in a mixture. Keep it aside. Blend tomatoes to a puree in a mixer.
Dry roast cumin seeds in a pan for 10 to 15 seconds, and then add the onion, and ginger garlic paste and cook it until it becomes golden brown in color.
Add the tomato beauty, turmeric powder, chili powder, garam masala, vegetable stock, and salt and cook on a low flame for 10 minutes. Add the Koftas and cook in low flame for three to four minutes. So hot and garnished with coriander.
