BEETROOT CUCUMBER TOMATO RAITA
Cucumbers are a great source of vitamin B, rich in Potassium and Magnesium which may help to lower blood pressure. Tomatoes contain large amounts of the antioxidant lycopene, that is effective in lowering the risk of cancer. Adding beetroot makes this dish a great source of various vitamins and minerals like folate, magnesium, potassium, vitamin B6, iron, thiamine, riboflavin, zinc, copper, and selenium.

Cucumber | 50g |
Tomato | 50g |
Beetroot | 25g |
Other Ingredients :
Coconut | 10g |
Coriander leaves | 10g |
Green chili | 10g |
Cumin seeds (Zeera) | 10g |
Asafoetida | Pinch |
Salt | As per taste |
METHOD:
• Mix beetroot, cucumber, tomato, curd, salt and green chili in a bowl and keep it aside.
• Dry roast cumin and asafoetida for about 30 seconds. Pour this mixture over the right A and mix well.
• Add coconut and coriander and mix well. Serve the raita chilled.
